Oh Baby! Baby Back Ribs

5 pounds of baby back ribs

1 bottle Lighthouse B-BB-Q Sauce

¼ cup honey

1 tsp lime juice

1 small red onion, finely chopped

¼ cup butter

Place the ribs in a large pot of water and bring to a boil. Reduce heat to a simmer and cook for 30 minutes. While the ribs are boiling, melt the butter in a skillet at a medium heat and add the onions. Cook until the onions are soft (about 5 minutes) add the Lighthouse, honey and lime juice. Simmer for 1-2 minutes. Place the ribs in a baking pan (meat side up) and cover with sauce. Bake at 350 degrees for 30 minutes.

Devilish Deviled Eggs

5 eggs

3 tbsp mayonnaise

3 tbsp Pina Coloda Mustard

1 tsp curry powder

1 tbsp dill relish

1 tsp minced garlic

Paprika

Put the eggs in a medium sasucepan and cover with cold water. Bring the water to a boil, then lower the heat and simmer for 10 minutes. Drain and cover with cold water. Peel when cool.

Cut the eggs in half lengthwise and remove yolks. In a small bowl mix the yolks with the remaining ingredients (except paprika). Mix well and mound the filling into the whites. Dust the tops with paprika.

Portobello and Zucchini Tacos

2 medium-sized portobello mushrooms (about 1 lb) sliced into 1/4 inch slices

1 large zucchini cut into 1/4 inch slices

1/4 cup olive oil

2 tbsp butter

2 tbsp Mango Garlic Sauce

1/2 tsp oregano

1/2 tsp rosemary

1/2 tsp dried parsley

1/4 lb pepperjack cheese

1 pkg corn tortillas

Heat the olive oil and butter in a skillet over medium heat. Add the zucchini, mushrooms, Mango Garlic and spices. Cover and cook for 1 minute. Stir the ingredients and cover for another 2 minutes. DO NOT OVERCOOK! While mushroom mixture is cooking, heat corn tortillas in a frying pan on low heat until nice and warm (you can also microwave them but be careful - they can get mushy). Spoon mushroom mixture into the tortilla shells and top with grated cheese.

Comfort Meatloaf

2 lbs ground turkey meat

2 eggs

1 medium onion, finely chopped

1 tbsp olive oil

1 tbsp Mango Garlic Sauce

1/2 cup seasoned bread crumbs

1/4 cup ricotta cheese

1 tsp tarragon

Salt and pepper to taste

Glaze

1/4 cup Lighthouse B-B-Q

Preheat oven to 350 degrees. In a large bowl place the ground turkey with all the other ingredients (except Lighthouse B-B-Q) and mix well. Mold and place in a loaf pan. Cook for 45 minutes at 350 degrees. Remove and add the Lighthouse B-B-Q sauce to the top of the loaf. Return to oven and cook an additional 15 minutes.
